I decided to make pickles and hot sauce today. Not like, together, but one batch of pickles and one batch of hot sauce. The pickles will not ferment; they'll just be refrigerated for a couple of days to let the pickles absorb the vinegar, garlic, salt and spices. The hot sauce will ferment for 3 weeks. After 3 weeks I will puree the peppers, strain
